Laksa: Ingredients and preparation

Recipe: Traditional Laksa

Ingredients:

200 grams of rice noodles
200 grams of chicken breasts, thinly sliced
200 grams of shrimp, peeled and deveined
2 boiled eggs, halved
Fresh bean sprouts for garnish
Fresh cilantro for garnish
1 fresh lime, cut into wedges

For the Laksa paste:

2 stalks of fresh lemongrass
3 red chillies, seeded and chopped
1 small onion, chopped
2 garlic cloves
1 inch fresh ginger, chopped
1 teaspoon of turmeric powder
1 tablespoon of coriander powder
2 tablespoons of oil

For the broth:

400 ml of coconut milk
1 liter of chicken stock
2 tablespoons of fish sauce
1 tablespoon of brown sugar

Instructions:

1. Prepare the Laksa paste. Begin by cutting the lemongrass stalks and discarding the outer layer. Chop the inner part. Combine it with chillies, onion, garlic, ginger, turmeric, coriander, and oil in a food processor. Blend until a paste is formed.

2. Heat a large pot on medium heat and add the Laksa paste. Stir fry for 2-3 minutes until it becomes fragrant.

3. Add chicken stock, coconut milk, fish sauce, and brown sugar to the pot. Mix well and let it simmer for 15-20 minutes.

4. While the broth is cooking, prepare the noodles according to the package instructions.

5. Add the sliced chicken breasts and shrimp to the broth. Let it cook for a further 5-7 minutes until the chicken and shrimp are cooked through.
